Spooky Spaghetti Squash Nests

By : paleopaparazzi 0 Comments

These Spaghetti Squash “Nests” are cute and a little spooky all at the same time! A perfect appetizer or fun festive side dish to serve at halloween. The dairy free cream cheese and olives make them look a little like monster eyes starring back at you inside the nests, hehe!

The nests are held together by a little egg so it would make them vegetarian but not vegan. You could make them without the egg, but they wouldn’t hold together quite as well, although they would still be very delicious. Because of the spaghetti squash they are also naturally gluten free and grain free so they would be paleo friendly and if you used a marinara sauce that is sugar free it would also be Whole30 friendly as well ;)

I created this fun spaghetti squash recipe with my friends over at Vitacost! I have been shopping online at Vitacost.com since June of 2017 when I first discovered them! They make it super easy to keep my kitchen stocked with so many healthier products! I usually stock up on things like sauces, spices, almond flour, coconut milk, nuts, baking powder, etc…so I can make delicious meals and treats like this for my family. I hope you make these cuties and if you do, I love when you share with me on Instagram! Just tag your photo with #paleopaparazzi so I won’t miss it!

Total Time: 1 hour, 40 minutes

Spooky Spaghetti Squash Nests

  • 1 medium spaghetti squash
  • 1 egg, beaten
  • 1 jar marinara sauce, warmed
  • 1 can pitted black olives
  • 1 package dairy free cream cheese
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • basil for garnish

  1. Preheat your oven to 350 degrees.
  2. Carefully cut spaghetti squash in half, lengthwise and remove the seeds.
  3. Place squash halves face down on a lined baking sheet, pierce skin with a fork and bake for 40 mins. or until a fork pierces through the outer skin easily.
  4. Remove cooked squash from the oven and cool until safe to touch.
  5. In a large bowl add your egg, salt, pepper and garlic powder and beat together.
  6. Scoop out the squash strands and add to the bowl with beaten egg mixture, mix together well.
  7. Pack spaghetti squash mixture into a 1/4 cup measuring cup to give it a nest shape and remove onto a lined baking sheet, use fingers to make a little well into the center of the “nests”.
  8. Cook “nests” for 35-40 mins. and gently remove with a spatula onto a serving platter.
  9. Top with warm marinara sauce, a dollop of dairy free cream cheese, an olive and a sprinkling of fresh basil and serve. Makes about 12-14 “nests”.
