Creamy Chicken Almond Soup

As a food blogger I spend a lot of time grocery shopping, trying to stock up on fresh produce and other goodies so I can continue creating delicious healthy recipes for you! I’ve teamed up with Albertsons & Safeway this holiday season to help bring you this new delicious healthy meal made with real food ingredients found in their store.

I’ve been craving soups lately especially with the cooler weather and wanted to create a chicken soup that was a little different and not in my usual rotation. This Creamy Chicken Almond Soup was the result and my new favorite! The recipe was inspired by a family trip to Vietnam last Thanksgiving. It has a touch of south asian flavor thrown into the mix making it a special one to share with my family this holiday as we have not been able to travel abroad. It brings back magical memories we were able to share and I can’t wait to make it together in our kitchen. We ate soup for almost every meal when we were there & It started to really grow on us. This soup can be made a day ahead to really let those flavors meld together and make iteven more delicious. It also thickens up a bit and is more like a stew the next day, if you like that you’re good to go but if not, you can always thin it out with some more broth, water or almond milk.

Some of the core ingredients that make this soup really amazing are the Open Nature Chicken Breasts that are hormone and preservative free, the plain unsweetened O Organics Almond milk and the Open Nature Creamy Almond Butter. It’s hard to find products free from preservatives, added sugar and other questionable ingredients- that’s why I like Safeway’s Open Nature and O Organics lines, I spend less time having to read labels which makes shopping easier and less stressful. Plus, the quality of these products really help this soup shine and even help to keep it Whole30 friendly, major score!

This is such hearty soup that is sure to fill you up and isn’t like every other chicken soup outthere. It’s full of protein rich foods and healthy fats that make you feel good after eatingthem.
