Gluten Free Fudgy Brownies

We recently received a box of holiday goodies from our friends which included brownies that were not gluten-free. After drooling over them for quite some time, I got to thinking how much I really missed brownies. They looked Fudgy and tempting but I gave them away to family who gladly gobbled them up and got to work in my kitchen.

Fudgy brownies are my weakness! I used to love making them for the holidays and sharing them with my family and friends. But I stopped making them from scratch after I started eating gluten-free. I’m not really sure why because they aren’t that hard to make. Also, iIf you don’t mention that these brownies are grain-free, I promise you no one will know the difference. They are so decadent and rich, you’ll want to snuggle up by the fire with one in hand and a hot cup of coffee.

Some of the core ingredients that make these brownies really amazing are the Open Nature® Superfine Almond flour that creates a texture close to regular flour, the plain unsweetened O Organics® Coconut milk that’s smooth and creamy and the rich, sweet Signature Select™ Clover Honey.

It’s hard to find products free from unnecessary additives like preservatives and other questionable ingredients. Gluten Free Fudgy Brownies

Ingredients
- 9 oz. bag of dark chocolate chips
- 3/4 cup coconut sugar
- 3/4 cup Open Nature® Almond Flour
- 1/4 cup unsalted butter
- 2 tbsp Signature SELECT™ Clover Honey
- 2 tbsp. dark cocoa powder
- 2 tbsp O Organics® Original Unsweetened Coconut Milk
- 1 tbsp coconut oil
- 1tsp vanilla extract
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
Instructions
- Preheat oven to 350 Degrees and line an 8×8 baking dish with parchment paper.
- First cream coconut sugar and eggs together with a handheld or stand mixer, beat mixture on high for 3-5 minutes or until fluffy and doubled in size.
- Add butter, coconut oil and chocolate chips to a microwave safe bowl and heat in 30 second intervals, stirring after each until completely melted and smooth.
- Let chocolate mixture cool a bit and then add to the fluffy egg mixture along with vanilla, coconut milk and honey, stir until well combined.
- In a separate bowl whisk almond flour, cocoa powder, salt and cinnamon.
- Gently fold flour mixture into wet mixture a little at time until fully incorporated.
- Pour brownie batter into lined baking dish and cook on middle rack for 25-28 minutes, or until a toothpick inserted in the center of brownies comes out clean.
- Let brownies completely cool on a wire rack, once cool, gently lift the parchment paper out of the baking dish and cut into equal squares to serve.
