Tuna Veggie Poppers

Sometimes it’s nice to be able to hit the easy button especially with how 2020 treated all of us! Matt and I have birthday’s super close to each other and they are just a few days away! I wanted to create a fun meal at home for us to celebrate. I dreamt up this quick but delicious appetizer to kick off the celebration! Everything is made easier with Bumble Bee® Tuna! Just pop open a few cans, and you will be transported to flavor town for a fraction of the time and price!

I’m using Bumble Bee Albacore Tuna in this healthier appetizer that will make everyone happy! I snuck in some veggies for good measure, a few carrots, some broccoli a few eggs and some almond flour to bind everything together. Bake these bad boys in the oven and serve on a platter with your favorite dip and maybe some extra veggies for that crunch factor. You better believe these poppable mini tuna patties will be gobbled up quickly, so be sure to make extra and serve with your favorite dip!

Tuna is budget-friendly and shelf-stable so you can always keep a supply of it in your pantry, especially in times like this. It’s one thing I am always purchasing to have on hand for quick healthy meals. Tuna is lower in calories, fat, saturated fat, and cholesterol than even the leanest cuts of beef and chicken. It’s naturally healthy, familiar (mom & grandma always bought it) and sustainable.
Tuna Veggie Poppers
Ingredients
- 2-5 oz. cans Bumble Bee Solid White Albacore Tuna
- 1/3 cup shredded carrot
- 1/3 cup shredded broccoli
- 5 tbsp almond flour
- 2 eggs
- 2.5 tsp garlic powder
- 1/2 tap salt
- 1/2 tsp pepper
- 1/4 tsp smoked paprika or hot sauce
Instructions
- Preheat oven to 350 degrees and line a large baking sheet.
- Add tuna and shredded veggies to a medium bowl and combine.
- In another medium bowl whisk eggs and spices together, add egg mixture to tuna/veggie mix and combine until a paste forms.
- Scoop a heaping tablespoon of the tuna mixture in your hands and mold into a mini patty, add onto greased and lined baking sheet and flatten a little bit.
- Place pan in oven and bake for 25 minutes or until a toothpick inserted in the center of a tuna patty comes out clean.
